This weekend has been a bit surreal for me. After the past year and being so far away from the man I love yet haven’t seen face to face; God is working in our lives. It may be separately until we can be together; but God knows best and His timing is always best.
In the wee hours of the morning I got a phone call from my west coast boyfriend. We got to wish each other a Happy New Year and once again hear the other’s voice. It was our time to listen before the connection broke. It was absolutely sweet at 3-ish this morning which would have been 3 hours earlier in LA.


Our plan was to have our corned beef and cabbage for lunch. Yeah it had to be changed we had it for supper tonight. Grandma Rosemary was born into the Swan family as well as the Roberts family. So I don’t know that this is an Irish tradition, it seems to be more of an American tradition with Irish-Americans though. This dish is meant to be a way to hope for good fortune throughout the New Year. The cabbage was simply the cheapest vegetable to go along with the meat.
The past month has already been a milestone in a few ways for me and Bryan. I am grateful and excited about our future right now even with the world as it is. God’s timing is truly amazing and many times ironic; but He is never wrong.
Unfortunately we had to go with the canned corned beef this year instead of the corned beef brisket. The brisket was missed tonight. Hopefully the next time we will have the right one.

Still… our hope is in God not food. However, Americans do love our food.
