
For weeks Dad has been saying how much he wants Ham and Beans. James, my youngest brother somehow discovered he does not like any type of bean. Which is kind of funny cause he’s the last one who needs more beans in the family. He’s ornery and expects special treatment is all I know, it’s another way he likes to get his way with food.
Anyhow with what happened last week we decided we needed to make Dad’s wish come true this week. His work car went its last mile and in order to get another car Dad had to make a major decision. Monday came around and we forgot about it so yesterday we pounced on this idea but it was later than we would have liked to get started on it. I got the ham in as soon as we got it but it was a bit bigger than my cast iron skillet, the last chunk of ham fit in it just perfectly.
My biggest fear was the juice spilling out in the middle of the night or early morning. However, we needed that juice for the beans. So what did I do? Mom and I both woke up at various times in the middle of the night to empty the ham juice into the beans. It may sound crazy and extremely tiresome but it was worth it.
Dad said it hit the spot at dinnertime. All of our back and forth during the night paid off. I love how this skillet cooks the meat was so tender and Mom made the jiffy mix. He even took his ham and beans to work tonight and there is another helping left.
I am going to need either a nap or more sleep tonight.
Do you ever try to make someone’s taste buds say hallelujah? It can be an awesome feeling.
