So as you know I have been indulging in my love of vegetables and canning recently. I didn’t know how much I loved canning. Or that I could have as much fun playing around with ingredients canning as I have with pickles and salsa.
Right now we have a lot of green tomatoes. So I figured instead of letting them go to pot, let’s use them for a green salsa. Today when we began to retrieve them we came up with a few red ones still out there so of course we brought those ripe ones on in. The problem was I only had enough configured for one batch this evening we had enough picked for two batches.
We had enough red ones to make, yes, a red and a green batch of salsa. This is a good problem considering how much salsa we do go through. I still get to see how much green salsa works and see whether I end up adding more peppers or something else altogether.
Sometimes I think I missed my calling as a Chef!
